Our Story
A whole winter, held in a single pour.
The gardens
Our tea begins in a handful of small gardens across Uji, Yame and Shizuoka, where a few families have tended the same hillsides for generations. What we take is what the spring decides.
The harvest
For a few days each spring, the new leaf is ready. It carries everything the plant has kept through winter, a sweetness that no later picking will hold.
It is picked by hand, one flush and no more, before the season moves on without it.
The making
What follows is patience.
The leaf rests in cold water for many hours, drawn out slowly, never heated and never hurried, until the sweetness comes forward on its own and the bitterness never arrives at all.
The fruit
The fruit is held to the same standard.
A village so deep in the Tokushima mountains that the trees are still reached on foot.
Each fruit wrapped on the branch by hand, so it ripens pale and perfumed.
For a clean bitterness that tea has always welcomed.
Only then, and gently, do the sparkling bubbles come.
Every release is small, dated to the harvest that made it, and gathered by hand. Once a season is gone, it is not repeated.
Each pour is one garden, one harvest, one moment, held in a single bottle.
